  • 1 to 2 medium onions, chopped
  • 2 to 3 Tbsp. vegetable oil
  • 2 eggs, beaten
  • 1 lb. boiled or steamed rice
  • salt to taste

    Stir fry the onions for about 1 1/2 minutes in the oil, then add the eggs. Once the eggs have set, add the rice and salt to taste. Stir until evenly mixed.
