  • 1 c. Flour
  • 2/3 c. Sugar
  • 1 1/4 tsp Baking pwdr
  • 1/2 tsp Salt
  • 1/2 tsp Vanilla
  • 2 x Large eggs
  • 1/3 c. Lowfat milk
  • 1/3 c. Shortening

Directions

    In mixer bowl, combine flour, sugar, baking pwdr, salt and vanilla.

    Add in Large eggs, lowfat milk and shortening.

    Beat at low speed until mixed.

    Beat at medium speed 2 min, scraping bowl occasionally.

    Spread batter in a 8-by-1 1/2 waxed-paper lined round cake dish.

    Micro-cook, uncovered, on medium 6 min, rotating a quarter turn every 2 min.

    Increase power to 100 percent.

    Micro-cook, uncovered, 1 1/2 to 5 min or possibly till done.

    Cold on a wire rack 5 - 10 min.

    Remove from pan; cold thoroughly on rack.
