- 1 3/4 c. sifted all purpose flour
- 3 teaspoon baking pwdr
- 2 tbsp. sugar
- 1 c. lowfat milk
- 1/2 teaspoon salt
- 3 tbsp. melted shortening
- 1 egg, well beaten
Directions

1Preheat oven to 425 degrees.

2Sift flour, baking pwdr, sugar and salt; sift into a bowl and make a well in the center.

3Beat egg till light; add in lowfat milk and melted shortening.

4Add in egg mix all at once to flour and stir only till flour is moistened and well combined.

5Don't attempt to beat till smooth.

6Remove all batter from mixing spoon and sides of bowl.

7With a Tbsp., fill the muffin pans half full of batter, dividing the batter proportionately so which all the muffins will be the same size.

8Bake in a warm oven for 20 to 25 min.

9Makes 12 two inch muffins.

10NOTE: Smaller muffins pans may be used, making from 15 to 20 muffins.

11To keep muffins or possibly warm breads hot, use a napkin or possibly a warm bread cloth, opened, on a plate and place the muffins on it, bringing the four corners up over the muffins to keep out the cold air.
