Basic Muffin Recipe

  • 3 1/2 c. flour
  • 1 c.sugar
  • 5 teaspoon baking pwdr
  • 1 1/2 teaspoon salt
  • 2 beaten Large eggs
  • 1 1/2 c. lowfat milk
  • 1/2 c. shortening

Directions

    Stir together flour, sugar, baking pwdr, and salt; make a well in center.

    Combine Large eggs, lowfat milk, and shortening, and add in all at once to dry ingredients, stirring just till moistened.

    Fill greased or possibly paper-lined muffin tins two-thirds full.

    Bake at 375 degrees for 25-30 min.

    Makes 9-12 Texas muffins or possibly 18-24 muffins.

    VARIATIONS:

    Blueberry: Two c. blueberries and one tsp.

    Oatmeal Blueberry: Two c. blueberries, one tsp.
