Basic Pilaf (Emeril) Recipe

  • 1 Tbsp. Oil
  • 1/2 c. Minced onion
  • 6 ounce Raw chicken breast half minced fine (about 3/4 c. minced chicken)
  • 1 c. Raw rice
  • 1 x Bay leaf
  • 3 c. Chicken stock Salt to taste Freshly-grnd black pepper to taste

Directions

    Heat oil in a small saucepan.

    Add in onion and cook till translucent/soft.

    Add in chicken and cook for 4 min.

    Add in rice and bay leaf, stir to coat and add in stock.

    Bring to a boil, reduce heat to a simmer and cover.

    Cook for 15 min or possibly till tender.

    Season with salt and pepper, fluff rice with a fork and serve.

    This recipe yields 3 to 4 servings.
