Basic Pilaf (Emeril) Recipe

- 1 Tbsp. Oil
- 1/2 c. Minced onion
- 6 ounce Raw chicken breast half minced fine (about 3/4 c. minced chicken)
- 1 c. Raw rice
- 1 x Bay leaf
- 3 c. Chicken stock Salt to taste Freshly-grnd black pepper to taste
Directions

1Heat oil in a small saucepan.

2Add in onion and cook till translucent/soft.

3Add in chicken and cook for 4 min.

4Add in rice and bay leaf, stir to coat and add in stock.

5Bring to a boil, reduce heat to a simmer and cover.

6Cook for 15 min or possibly till tender.

7Season with salt and pepper, fluff rice with a fork and serve.

8This recipe yields 3 to 4 servings.
