Basic Puerto Rican White Rice

- 3 tsp. corn oil
- 2 1/2 c. short grain rice
- 4 to 4 1/2 c. boiling water
Directions

1Heat the oil in a medium saucepan with a tight fitting lid. Add the rice and saute quickly over medium-high heat for 2 minutes.

2Add the water and cook until almost all of the liquid has evaporated.

3Stir well.

4Reduce the heat to very low and cover the rice.

5Cook for 20 more minutes, stirring after 10 minutes.
