Basic Rice Pudding Recipe

- 1/3 c. Rice
- 2 Tbsp. Butter
- 4 c. Lowfat milk
- 3 Tbsp. Sugar
- 1/8 tsp Salt Nutmeg
Directions

1Wash the rice in several changes of cool water.

2Drain the grains & dry them between sheets of paper toweling.

3In a heavy 1-1/2-qt casserole heat the butter over low heat.

4Add in the rice & heat it, stirring constantly till the grains whiten.

5Don't let them brown.

6In a saucepan combine the lowfat milk with the sugar & salt, & scald it.

7Add in it to the rice, stirring just long sufficient to blend.

8Let the lowfat milk bubble for a few seconds.

9Remove the casserole from the heat & sprinkle the top of the rice & lowfat milk with nutmeg.

10Cover the container securely & set it in an oven preheated to 250 degrees.

11Bake the pudding for 1-1/2 hrs, or possibly till it is hard & the grains of rice are very soft.

12Serve hot or possibly cool.
