- 1 x flour, all-purpose for dusting
- 3 cups flour, self-rising
- 80 grams butter cubed
- 1 cup milk
- 1 x fruit jam to serve
- 1 x whipped cream to serve
Directions

1Preheat oven to 200C.

2Lightly dust a flat baking tray with plain flour.

3Sift self-raising flour into a large bowl.

4Using your fingertips, rub butter into flour until mixture resembles breadcrumbs.

5Make a well in the centre.

6Add 1 cup of milk.

7Mix with a flat-bladed knife until mixture forms a soft dough, adding more milk if required.

8Turn onto a lightly floured surface.

9Knead gently until smooth (don't knead dough too much or scones will be tough).

10Pat dough into a 2cm-thick round.

11Using a 5cm (diameter) round cutter, cut out 12 rounds.

12Press dough together and cut out remaining 4 rounds.

13Place scones onto prepared baking tray, 1cm apart.

14Sprinkle tops with a little plain flour.

15Bake for 20 to 25 minutes or until golden and well risen.

16Transfer to a wire rack.

17Serve warm with jam and cream.
