- 4 large quail
- 1 tsp. salt
- vegetable oil
- 1/4 c. flour
- 1/8 tsp. pepper
Directions

1Place flour, salt and pepper in a paper bag.

2Dip quail in water and shake off excess.

3Drop quail into bag and shake, covering each bird thoroughly.

4Heat a frying pan half filled with oil.

5Brown quail on both sides.

6Cover skillet and reduce heat. Cook slowly until tender, about 30 minutes, turning once to brown evenly.
