- 1 medium white onion, finely chopped
- 2 garlic cloves, finely chopped
- 2 (400 g) cans Italian plum tomatoes
- 1 teaspoon granulated sugar
- 1 teaspoon Italian herb seasoning
- salt and pepper
- olive oil
Directions

1Add enough olive oil to cover the bottom of a large pan, add the onions and garlic, cover and sweat on a low flame for a few minutes.

2Add the tinned tomatoes, sugar, salt and pepper to taste and Italian herbs.

3Cook, uncovered, on a high flame for about 20 mins or until liquid has reduced by half.

4Check seasonings.

5Blend in a food processor until smooth.
