Basic Whipped Sweet Potatoes

  • 2 lbs fresh sweet potatoes (yams)
  • 12 cup butter
  • 13 cup hot milk
  • 4 tablespoons sugar
  • 1 14 teaspoons allspice

Directions

    In a medium saucepan, cook sweet potatoes in boiling water to cover until tender, 25-30 minutes.

    Drain, peel off skins.

    Place potatoes in a bowl.

    Mash with potato masher or electric mixer until smooth.

    Add butter, milk, sugar, and allspice; mix until fluffy and blended.
