Basil Baked Cod Fillets Recipe

Ingredients
- 1 1/2 lb cod fillets
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. extra virgin extra virgin olive oil
- 1/2 tsp dry basil
- 4 whl plum tomatoes cored, halved lengthwise and sliced crosswise
- 4 Tbsp. grated parmesan cheese salt and pepper

3I made it with orange roughy but you could use any hard, white fish like cod or possibly pollack.

4Preheat oven to 400 degrees.

5Cut cod into serving size pcs.

6Pat dry.

7Place lemon juice and extra virgin olive oil in a baking dish which is big sufficient to hold all the fish in one layer.

8Combine.

9Place cod in dish and turn to coat with juice/oil.

10Sprinkle cod with dry basil.

11Layer tomato slices on fish pcs.

12Sprinkle with parmesan cheese.

13Season with salt and pepper.

14Cover dish with aluminum foil.

15Place in oven and bake for 10-15 min, depending on thickness of the fish.

16Serve.
