- 1 Tbsp. olive oil
- 3 cloves garlic, minced
- 2 whole skinless, boneless chicken breasts, cut in 1-inch chunks
- 1 medium zucchini, cut into chunks
- 2 medium fresh tomatoes, cut into chunks
- 1 Tbsp. dried basil
- 2 Tbsp. vinegar
- 1/4 tsp. pepper
- cooked rice or pasta
Directions

1Heat oil in skillet; saute garlic.

2Add chicken and cook until no longer pink; remove and keep warm.

3Combine remaining ingredients, except rice or pasta.

4Toss to coat vegetables well. Add to skillet and stir-fry about 3 to 5 minutes.

5Return chicken to skillet and heat thoroughly.

6Serves 4. Serve over rice or pasta.
