- 1-1/2 cup Spinach Leaves
- 3/4 cups Fresh Basil Leaves
- 1/2 cups Toasted Pine Nuts
- 3 cloves Garlic
- 1/2 cups Grated Parmesan Cheese
- 3/4 teaspoons Salt
- 1/2 teaspoons Black Pepper
- 1 Tablespoon Fresh Lemon Juice
- 1 whole Lemon Zest
- 1/2 cups Olive Oil
Directions

1Pulse the spinach, basil, pine nuts and garlic in the food processor for a few seconds. Add the remaining ingredients in the food processor and start blending; at the same time, drizzle the olive oil through the top until smooth.

2Note: I like my pesto kind of thick, so sometimes I don't use all the oil.
