Basil Spinach Pesto

  • 1-1/2 cup Spinach Leaves
  • 3/4 cups Fresh Basil Leaves
  • 1/2 cups Toasted Pine Nuts
  • 3 cloves Garlic
  • 1/2 cups Grated Parmesan Cheese
  • 3/4 teaspoons Salt
  • 1/2 teaspoons Black Pepper
  • 1 Tablespoon Fresh Lemon Juice
  • 1 whole Lemon Zest
  • 1/2 cups Olive Oil

Directions

    Pulse the spinach, basil, pine nuts and garlic in the food processor for a few seconds. Add the remaining ingredients in the food processor and start blending; at the same time, drizzle the olive oil through the top until smooth.

    Note: I like my pesto kind of thick, so sometimes I don't use all the oil.
