Basil & Zucc Soup

Ingredients
- 1 tablespoon butter
- 1 tablespoon oil
- 1 medium onion
- 2 cloves garlic, crushed
- 6 medium zucchini, finely chopped
- 3 cups water
- 2 chicken stock cubes, crumbled
- 2 teaspoons sugar
- 1 tablespoon lemon juice
- 13 cup chopped fresh basil
Directions

1Heat the butter and oil in a medium saucepan, add the onion and garlic, sir over a medium heat for about 2 minutes or until the onion is soft.

2Stir in all the other ingredients-except the basil- bring to the boil, reduce to a simmer and cook uncovered for about 20 minutes or until the zucchini is tender.

3Stir in the basil.

4Blend or process the mixture until smooth.

5Return to the pan and reheat.

6Serve topped with sour cream, paprika, and extra basil leaves if you wish.
