- 5 tablespoons flour, all-purpose
- 60 grams butter
- 1 each onions cut into strips
- 1 litre beef stock prefer veal stock if possible
- 100 grams cheese grated
Directions

1Cook flour in dry, hot skillet until light brown.

2(This can be done in advance, or in large amounts and used later).

3Add butter to flour and mix.

4Add onions and cook until softened.

5Add stock, bring to boil, and simmer 20 minutes.

6Serve with grated cheese.

7Add a dash of red wine if desired.
