Ingredients
- 2 lb. potatoes, peeled and cut into 1-inch cubes
- 2 Tbsp. butter or margarine
- 1 1/2 c. onion, chopped
- 1 clove garlic, minced
- 1/2 c. celery, chopped
- 1/2 c. carrots, grated
- 2 beef bouillon cubes
- 2 c. boiling water
- 1 tsp. salt
- 2 Tbsp. parsley, chopped
Directions

1Cover potato cubes with water.

2Let stand while preparing sauce.

3Melt butter or margarine in large pan.

4Add onion, garlic, celery and carrots; saute until vegetables are limp.

5Drain potatoes and add to vegetables.

6Mix thoroughly.

7Dissolve bouillon cubes in the boiling water.

8Add to potatoes along with salt.

9Cover, lower heat and simmer slowly until potatoes are tender, about 30 minutes.

10Pour into tureen and sprinkle with parsley.

11Very low in calories.
