- 3 bell peppers
- 3 medium tomatoes
- 1 large cucumber
- 1 onion
- 1/3 cup red wine vinegar
- 3/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon sugar
- 1/4 teaspoon oregano
- 1/4 teaspoon basil
- 1/4 teaspoon marjoram
- 1/2 teaspoon parsley

Directions

1Seed and dice the peppers and tomatoes.

2Peel, seed, and dice the cucumber.

3Peel and dice the onion.

4Toss vegetables in a large bowl.

5In a medium bowl whisk together the vinegar, oil, and seasonings.

6Pour over vegetables and toss.

7Refrigerate for 3 hours before serving.
