- 1 lb. bass fillets
- 3 eggs
- 3 Tbsp. flour
- 1/2 tsp. pepper
- 1/2 tsp. salt
- 2 cloves garlic
- 2 Tbsp. parsley
- cooking oil
Directions

1Separate eggs.

2Chop garlic and parsley.

3Poach fish in boiling water for 7 minutes.

4Remove and mash fish.

5Beat egg yolks; add flour.

6Stir in seasonings, garlic, parsley and fish. Beat egg whites until frothy; fold into fish mixture.

7Drop spoonfuls into hot oil (should be at 360° and 2 1/2-inches deep). Fry until golden.
