  • 1 lb. bass fillets
  • 3 eggs
  • 3 Tbsp. flour
  • 1/2 tsp. pepper
  • 1/2 tsp. salt
  • 2 cloves garlic
  • 2 Tbsp. parsley
  • cooking oil

Directions

    Separate eggs.

    Chop garlic and parsley.

    Poach fish in boiling water for 7 minutes.

    Remove and mash fish.

    Beat egg yolks; add flour.

    Stir in seasonings, garlic, parsley and fish. Beat egg whites until frothy; fold into fish mixture.

    Drop spoonfuls into hot oil (should be at 360° and 2 1/2-inches deep). Fry until golden.
