  • 1 c. corn meal
  • 2 c. boiling water
  • 3 to 4 eggs
  • 1/2 c. milk
  • 1/2 tsp. salt
  • 2 Tbsp. sugar
  • 2 Tbsp. melted shortening
  • 1/2 c. flour (scant)
  • 3 tsp. baking powder

    Boil corn meal and boiling water to a mush.

    Separate eggs and beat yolks with milk, salt, sugar, shortening, flour and baking powder.

    Add to corn meal mush.

    Beat egg whites and fold in last. Bake in 350° to 375° oven.

    This makes a very moist and slightly sweet corn bread.
