  • 1 1/2 cup extra sharp cheddar, coarsely grated
  • 1 cup unbleached all purpose flour
  • 3/4 packages stick unsalted butter, cut into tablespoons
  • 1/2 tsp salt
  • 1 tsp bbq seasoning mix
  • 2 tbsp heavy cream

    Preheat the oven to 350F fahrenheit with the rack in the upper and lower thirds of the oven

    Line two sheet pans with parchment paper and set aside.

    Add the cheese, flour, butter, salt, and barbecue mix to the bowl of the food processor and pulse until the mix resembles a course meal

    Add the cream and pulse until a ball forms.

    On a lightly floured work surface, roll the dough out to 1/4 to 1/8 inches thick.

    Cut the dough with a sharp knife into 1 quarter inch wide strip

    Transfer to the prepared sheet pans leaving space between them and bake until golden brown about 15 minutes

    Flip the pans half way through the cooking time

    Cool completely on the sheet pans
