  • 1 lb. ground beef
  • 1 small green pepper, chopped
  • 1 pkg. chili seasoning mix
  • 1 1/2 c. water
  • 1 (15 oz.) can kidney beans, drained
  • 1 (4 oz.) can chopped green chiles, drained
  • 1 (8 oz.) can tomato sauce
  • 1 (7 oz.) can whole kernel corn, drained
  • 1 1/2 c. Minute rice
  • 1/4 c. shredded Cheddar cheese

Directions

    Brown ground beef in skillet; drain fat.

    Add green pepper and chili seasoning mix.

    Cook and stir until pepper is tender.

    Stir in water, beans and tomato sauce.

    Bring to boil.

    Reduce heat, cover and simmer 5 minutes, stirring occasionally.

    Add chiles and corn; bring to boil.

    Stir in rice; cover.

    Remove from heat. Fluff with fork and sprinkle with cheese.
