Ingredients

  • 3 lb. boneless pork roast
  • 1 lb. pinto beans
  • 7 c. water
  • 2 oz. jar diced pimento
  • 4 oz. can chopped green chilies
  • 1/2 c. chopped onion
  • 2 cloves minced garlic
  • 1 Tbsp. cumin
  • 1 tsp. salt
  • 1 tsp. oregano
  • 2 Tbsp. Mexene

    Put all ingredients in 6 quart Dutch oven and mix well.

    Cover and simmer on top of range about 5 hours or until pork is tender. Remove pork and break it up with fork and return it to pot and cook uncovered until thick, about 30 minutes.

    Yields 10 to 12 servings.

    Serve over corn chips and top with cheese, onions, avocado, tomato, sauces, etc.
