  • 2 c. beans, mixed
  • 2 Tbsp. salt
  • 1 ham hock
  • 28 oz. can tomatoes
  • 2 medium onions, quartered
  • 2 Tbsp. lemon juice
  • 1 1/2 tsp. chili powder
  • 1 tsp. black pepper

Directions

    Wash and drain beans; cover with water.

    Add salt; soak overnight.
  3. 3
    In morning drain beans and add 2 quarts water and ham hock with ham shreds.

    Bring to a boil.

    Cover and simmer 3 hours. Cut ham off bone; return meat to pot.

    Add remaining ingredients and simmer 30 minutes more.
