Bean Soup

  • 1/2 lb. dry marrow beans
  • 1 bay leaf
  • 1 stalk celery, sliced
  • 1 medium onion, diced
  • ham bone
  • 1 large potato
  • 2 slices bacon
  • 1 c. (8 oz.) tomato sauce

Directions

    Soak beans overnight in water.

    Change water and boil with bay leaf, celery, onion and ham bone.

    Simmer 1 hour.

    Dice in the potato.

    Fry bacon and set aside.

    Add the tomato sauce to the bacon fat and cook together for 10 minutes.

    Add to beans. Continue simmering 45 minutes to 1 hour until beans are tender. Garnish with crumbled bacon.
