- 2 cup chicken broth
- 1 cup white or brown rice
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 Yellow bell pepper, chopped
- 2 tbsp butter
Directions

1In a medium sauce pan bring chicken broth to a boil, add rice, reduce heat to low and cover.

2Add butter to frying pan and lightly brown onion without burning the butter.

3Add seasoning to taste.

4Rice should be done after 20 minutes.

5Fluff with a fork and add browned onion.

6Brown the edges of your bell peppers on high heat and add to rice.

7Add coarsely chopped fresh parsley to rice and mix well.

8Serve warm with dinner or allow to cool and serve as a salad.
