Ingredients

  • 4 lb. chuck roast
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/2 c. water
  • 1 c. barley
  • 1 medium onion, sliced thin
  • 2 cans cream of mushroom soup (or tomato soup is good too)
  • 1 tsp. sugar
  • parsley

Directions

    Rub salt and pepper into roast.

    Place in a 13 x 9-inch pan or similar-sized wide casserole.

    Mix remaining ingredients except parsley.

    Pour around the meat and cover tightly with foil.

    Bake at 325° for 2 1/2 hours or until tender.

    After 1 1/2 hours, turn meat over and add water if it seems too dry.
