- 4 lb. chuck roast
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 1/2 c. water
- 1 c. barley
- 1 medium onion, sliced thin
- 2 cans cream of mushroom soup (or tomato soup is good too)
- 1 tsp. sugar
- parsley
Directions

1Rub salt and pepper into roast.

2Place in a 13 x 9-inch pan or similar-sized wide casserole.

3Mix remaining ingredients except parsley.

4Pour around the meat and cover tightly with foil.

5Bake at 325° for 2 1/2 hours or until tender.

6After 1 1/2 hours, turn meat over and add water if it seems too dry.
