  • 1 pound lean ground beef
  • 1/4 cup quinoa
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 1 onion chopped
  • 2 stalks celery sliced
  • 2 carrots sliced
  • 1 zucchini sliced - then cut each slice in quarters
  • 4 cloves garlic chopped
  • 4 cups beef broth
  • 1/2 teaspoon thyme
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 teaspoon oregano

Directions

    In a Dutch Oven or other heavy pan, melt butter and add olive oil. When hot, add onion and saute till soft; add garlic and beef. Cook beef until there is no pink left - break it up as it cooks.

    When beef is cooked, add broth, quinoa, vegetable and spices. Bring to a boil and then lower the heat to medium and cook about 30 minutes or until vegetables are tender.
