Beef Balls With Tomatoes

  • 1 lb. extra lean ground beef
  • 1/2 tsp. salt
  • 1/4 tsp. dried thyme leaves
  • 1 clove garlic, minced or pressed
  • 2 Tbsp. chopped chives
  • 2 Tbsp. chopped parsley
  • 2 Tbsp. all-purpose flour
  • 1/4 c. butter or margarine
  • 2 eggs
  • 1/4 tsp. white pepper
  • 1 Tbsp. salad oil
  • 4 whole tomatoes, halved
  • parsley for garnish

Directions

    Mix beef with the eggs, salt, thyme, pepper, garlic, chives and parsley.

    Stir vigorously with spoon until mixture stiffens enough to shape into balls.

    Shape with hands into 8 balls, about the size of extra large eggs.

    Roll balls in flour.

    Set aside. (Recipe can be prepared to this point and refrigerated for later cooking.)
