Beef-Bean Enchiladas

- 1 1/2 lb. ground beef
- 1 medium onion, chopped
- 1 (1 lb.) can refried beans
- 1 tsp. salt
- 1/8 tsp. garlic powder
- 1/3 c. taco sauce
- 1 c. pitted ripe olives, quartered
- 2 (10 oz.) cans enchilada sauce
- salad oil (for frying tortillas)
- 12 corn tortillas
- 3 c. shredded Cheddar cheese
Directions

1Crumble ground beef in frying pan; add onion.

2Saute until meat is browned and onion is tender.

3Drain off excess grease. Stir in beans, salt, garlic powder, taco sauce and olives; heat until bubbly.

4Heat enchilada sauce; pour half the sauce into an ungreased shallow 3-quart baking dish.

5In skillet, heat the oil about 1/4-inch deep.

6Dip tortillas, one at a time, in hot oil to soften; drain quickly.

7Place 1/3 cup of beef filling on each tortilla; roll to enclose filling.

8Place seam side down in baking dish; pour remaining sauce over all; cover with cheese.

9Bake uncovered at 350° for 20 to 25 minutes.
