Beef Bourguignon

  • 2 Tbsp. oil
  • 1 1/2 lb. lean stew beef, cut in 1-inch cubes
  • 1 large onion, chopped
  • 2 Tbsp. flour
  • 1 clove garlic, minced
  • 1 1/2 c. red wine (boil 5 minutes before using)
  • 1 can beef bouillon
  • 2 tsp. tomato paste
  • 2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 tsp. basil
  • 1/2 tsp. thyme
  • 1/2 lb. sliced mushrooms

Directions

    Brown beef and onion in oil. Sprinkle with flour and brown. Add remaining ingredients, except mushrooms. Cover and simmer slowly for 2 1/2 hours. Add mushrooms in last 15 minutes. Serve over plain or wild rice.
