  • 2 lb. ground beef
  • 1 medium cabbage, chopped
  • 1 onion, chopped
  • 4 carrots, sliced
  • 1 large (46 oz.) can V-8 juice
  • 2 cans Ro-Tel
  • 2 cans pinto beans
  • 1 qt. home canned frozen tomatoes or 2 cans store bought
  • 1 (6 oz.) pack Italian dressing mix
  • 1 (6 oz.) pkg. Zesty Italian dressing mix

Directions

    In a large pot, brown beef; drain well.

    Add all other ingredients and simmer until carrots are done, about 1 hour.

    This freezes well.
