  • 1 lb ground beef
  • 1/2 red onion
  • 1 16oz can old El Paso Red enchilada sauce
  • 3 tbsp molasses
  • 4 clove garlic
  • 1/8 cup Cilantro
  • 1/2 can black olives
  • 16 corn Tortillas
  • 1 cup Monterey spicy jack cheese
  • 2 mini red bell peppers

Directions

    Onion chopped fine, ground beef, garlic salt pepper, cumin,coriander in a fry pan till almost done .remove from heat.

    Chop cilantro, and thin shave bell peppers chop fine black olives.

    Get sauce into the pan as it heats up add the molasses

    Dip the tortillas into the sauce 1 by 1 stacking them till ready to use.

    Take each individual tortilla add a bit of ground beef,black olives, and Jack cheese roll up.

    Till pan is filled.

    Pour remaining sauce on top of enchilada then add leftover olives and shaved red bell pepper cook at 300 for 22 min.
