Beef Enchiladas

- 1 lb. extra lean ground beef
- 1 small onion, diced
- 1 (4 oz.) can diced green chilies
- 1/2 tsp. black pepper
- 1 c. shredded cheese, divided
- 8 (6-inch) corn tortillas
- 1 (10 oz.) can enchilada sauce
Directions

1Preheat oven to 350°.

2In large skillet cook beef and onions until brown.

3Drain off fat.

4Add diced chilies and pepper. Divide beef mixture evenly on each tortilla.

5Using one half cup shredded cheese, sprinkle a small amount of enchilada sauce in bottom of 13 x 9-inch baking pan.

6Roll each tortilla in and place in pan.

7Cover with remaining cheese and sauce.

8Bake 15 minutes or until hot and cheese is melted.

9Yields 4 portions (2 enchiladas).
