Beef Enchiladas

- 1 1/2 lb. ground beef
- 1 1/2 c. onions, chopped
- 1 1/2 c. shredded sharp Cheddar
- 1 can cream of mushroom soup
- 1 can enchilada sauce
- white corn or flour tortillas (8 to 10)
- cayenne pepper
- paprika
- salt and pepper to taste
Directions

1Preheat oven to 350°.

2Saute onions in frying pan and brown ground beef; season with spices.

3Mix onions, ground beef and 1/2 cheese in a bowl.

4Dip tortillas in warm oil, just long enough to coat sides (soften the tortillas) and fill with one to two spoonfuls of meat mixture.

5Roll closed and place in 13 x 9-inch baking pan with seam down.

6Mix mushroom sauce and enchilada sauce; pour over rolled tortillas.

7Top with remaining cheese. Bake 30 to 40 minutes.

8Allow to cool 10 minutes before serving.
