Beef Liver

- 10 strips bacon, cut bacon in thirds (broil bacon)
- 3 medium or small onions
- 1 1/4 to 1 1/2 lb. beef liver
- 1 can mushrooms (optional)
Directions

1Put 3 tablespoons margarine or butter and onions in the pan. Fry until tender, about 5 minutes.

2Remove onions from pan.

3Add 1/2 cup shortening until melted.

4Coat beef liver with flour and fry until browned, about 2 or 3 minutes on each side.

5Remove liver from pan; add 1 cup cold water and mushrooms.

6Cook 1 minute.

7Add bacon and onions.

8Cook all together.
-
9Put liver on top of onions.

10Cover and simmer on top of stove, low heat, 30 minutes. Stir every 5 minutes.
