- 1 lb. ground beef
- 2 c. diced carrots
- 1 c. diced green pepper
- 1/2 c. diced yellow onion
- 2 cloves garlic, minced
- 2 lb. baked beans, drained
- 1 can tomato sauce
- 2 Tbsp. molasses
- 1 Tbsp. Dijon mustard
- 1/2 tsp. celery seed
- 1/4 tsp. ground red pepper
- 1/4 tsp. salt
- 1/4 c. seasoned dry bread crumbs (or crushed crackers)
Directions

1Preheat oven to 350°.

2Brown the ground beef, crumbling it; then drain off grease.

3Set aside.

4Saute the carrots, peppers, onions and garlic in 2 tablespoons vegetable oil in a deep 12-inch skillet over moderate heat until slightly softened (about 6 minutes).

5Add the beef, celery seed, pepper and salt and stir. Next add the tomato sauce, molasses, and Dijon mustard.

6Mix and bring to a simmer.

7Then stir in the baked beans.

8Spoon into an 11 x 9 x 2-inch baking dish or 2 1/2-quart casserole.

9Sprinkle with bread crumbs or crackers and bake, uncovered for 35 to 45 minutes.
