Beef Noodle Soup

Ingredients

  • 1 1/2 lb. lean shin beef
  • 1 stalk celery, chopped
  • 1 tsp. parsley, chopped
  • 4 qt. water
  • 1 medium onion
  • 1 medium can tomatoes
  • salt and pepper to taste

Directions

    In a large kettle, place 2 quarts water, the beef, chopped onions and chopped celery.

    Season to taste.

    Cook until beef is tender; then remove beef from kettle.

    Add tomatoes that have been chopped fine and the chopped parsley.

    Add 2 quarts water and cook for 20 minutes.

    Then drop homemade noodles in while liquid is boiling rapidly.

    Cover and cook until noodles are done, about 30 minutes.

    Drop beef back in kettle to heat before serving.
