- 1 1/2 lb. center cut beef tenderloin
- 2 Tbsp. butter
- 1 1/2 tsp. salt
- pepper
- 1/4 c. water
- 10 potatoes, thinly sliced and peeled
- 6 Tbsp. butter (room temperature)
- 1 or 2 minced garlic cloves
- 3 Tbsp. finely chopped parsley
Directions

1Trim excess fat off meat.

2Remove tendon.

3Heat butter in skillet, brown meat well on all sides.

4Sprinkle with 1/2 of salt and pepper.

5Reduce heat.

6Cover and cook for 10 minutes.

7Turn meat once during cooking.

8Remove meat from skillet and wrap tightly in foil.

9Add water to pan.

10Heat.

11Scrape up brownings. Strain juices.
