Beef Rice Casserole

Ingredients
- 1 lb. ground beef
- 2 Tbsp. shortening
- 1 c. sliced carrots
- 1 1/2 c. canned green peas
- 3 c. water
- 2 tsp. flour
- 1 1/2 tsp. salt
- 1 1/2 tsp. pepper
- 3/4 c. uncooked rice
- 2 Tbsp. chopped onion
Directions

1Brown meat and onion; drain.

2Add carrots, peas, 2 cups water, salt and pepper to meat.

3Heat 5 minutes; stir rice into meat and vegetable mixture.

4Bring to a boil; lower heat, cover and cook 20 minutes or until rice is tender and fluffy.

5With last cup of flour and water, make a paste.

6Add to rice mixture; cook 5 minutes and serve.

7Yields 8 servings.
