Beef Rissoles

Ingredients

  • 1/4 cup oil
  • 1 None small onion, finely chopped
  • 4 slices bread, cubed
  • 1/3 cup 2% milk
  • 1 lb ground beef
  • 1 None egg, lightly beaten
  • 2 tbsp tomato paste
  • 1 cup fresh breadcrumbs
  • None None steamed baby potatoes, to serve
  • None None tomato salsa, to serve

Directions

    Heat 1 tbsp oil in a frying pan over medium heat. Cook onion for 4 mins, stirring, until soft. Meanwhile, soak bread cubes in milk. Combine ground beef, egg and tomato paste. Add onion and soaked bread. Shape into 8 rissoles and coat in breadcrumbs.

    Heat remaining oil over medium-low heat. Cook rissoles for 10 mins, until browned on each side.

    Serve with baby potatoes and tomato relish.
