Ingredients

  • 1 tsp. oil, heated
  • 1 lb. beef cubes
  • 2 medium leeks
  • 2 medium onions
  • 4 c. hot water
  • 2 stalks celery
  • 2 carrots
  • 2 large potatoes
  • 1 large parsnip
  • 1 1/2 tsp. salt
  • 1 tsp. pepper
  • 1 1/2 tsp. parsley

Directions

    First, chop all vegetables.

    Brown beef cubes in hot oil. Stir in leeks. Cover and cook on low heat about 15 minutes.

    Add remaining ingredients except parsley. Cover and simmer for 50 to 60 minutes. Add parsley. Add more hot water, if needed.
