Ingredients

  • 2 to 2 1/2 lb. beef (chuck)
  • 1 pkg. beef bones
  • 1 c. chopped celery
  • 1 c. chopped onion
  • 1 c. chopped carrots
  • 1 (16 oz.) can whole tomatoes
  • 1 Tbsp. chopped parsley
  • salt to taste
  • 2 c. noodles or rice

Directions

    Place meat and bones in pot; cover with water (approximately 8 to 10 cups).

    Bring to a boil.

    Skim off fat from top of soup. Add chopped celery, onion and carrots.

    Smash tomatoes and add to pot.

    Add salt to taste.

    Add parsley.

    Cover.

    Boil on low temperature for 2 to 3 hours.

    Add noodles or rice.

    Cook for approximately 20 to 30 minutes longer.
