  • 1 1/2 lb. chuck
  • 2 medium onions, cut into chunks or 12 to 18 pearl onions
  • 3 medium potatoes
  • 4 carrots
  • 1 (14 oz.) can beef broth
  • 2 Tbsp. tomato paste
  • 2 whole cloves
  • salt and pepper
  • 1 c. dry red wine or water
  • 1 bay leaf (break into 3)
  • handful finely chopped parsley
  • 1 clove garlic, peeled and crushed

Directions

    Preheat oven to 300°.

    Cut beef into 1-inch chunks.

    In large casserole, arrange beef, potatoes, onions, carrots and garlic. Pour beef broth and wine over it.

    Add tomato paste and stir lightly.

    Bury bay leaf and cloves.

    Salt and pepper lightly.
