- 1 lb. top boneless round steak
- 1/4 c. all-purpose flour
- 1/4 tsp. pepper
- 3/4 c. chopped onion
- 1 Tbsp. vegetable oil
- 3 c. water
- 1/2 c. finely chopped carrots
- 1/4 c. finely chopped celery
- 2 Tbsp. minced parsley
- 1/8 tsp. dried whole thyme
- 1/2 tsp. salt (optional)
- 2 c. cubed potatoes
- 1 c. sliced carrots
- 1 c. each: chopped onion and peas
Directions

1Trim fat from steak.

2Cut into 1-inch cubes.

3Combine flour and pepper.

4Dredge meat in flour mixture, reserving the excess. Cook meat, 3/4 cup onion and reserved flour mixture in oil in a Dutch oven over low heat until meat is lightly browned.

5Add water and next five ingredients.

6Cover, reduce heat and simmer 1 1/2 hours.

7Stir in potato, 1 cup carrot and 1 cup onion.

8Cover and simmer 20 minutes.

9Add peas and cook 10 minutes. Yields 6 cups. Preparation time is 2 hours.
