Ingredients
- 2 lb. lean beef chuck, cut into cubes
- 1/4 c. flour
- 2 Tbsp. dill
- 1 c. onion, chopped
- 2 cloves garlic, minced
- 2/3 c. celery, diced
- 3 c. carrots, diced
- 1/4 c. parsley, chopped
- 1/2 tsp. rosemary
- 1/2 tsp. black pepper
- 1/4 tsp. thyme
- 1/4 tsp. oregano
- 1/2 c. dry red wine
- 1 c. water
- 2 c. tomatoes, chopped
- 4 medium potatoes
Directions

1Coat beef with flour and brown in oil in a large Dutch oven. Add onion and garlic and cook until vegetables are soft.

2Pour off fat.

3Add remaining ingredients (except potatoes, tomatoes and carrots); bring to a boil.

4Cover and simmer for 1 hour.

5Add tomatoes, potatoes and carrots.

6Simmer 45 minutes or until potatoes are tender.

7Makes 8 servings.
