Ingredients
- 3 Tbsp. flour
- 1 1/2 lb. beef stew meat, cubed
- 2 Tbsp. oil
- 1/2 c. chopped onion
- 1 1/2 c. sliced carrots
- 1/2 tsp. dried thyme, crushed
- 3 c. V-8 juice
- 1 tsp. instant beef bouillon granules
- few dashes hot pepper sauce
- 4 medium potatoes, peeled and cubed
Directions

1In a plastic bag, combine flour and 1 teaspoon of salt.

2Add meat cubes a few at a time, shaking to coat.

3In a large saucepan, add onion and thyme.

4Stir in vegetable juice, bouillon, pepper sauce, potatoes, carrots and 1 cup of water.

5Bring to a boil; reduce heat.

6Cover and simmer 1 1/4 hours or until vegetables are tender.

7Skim off fat.

8Serves 6.
