- 2 lb. beef
- 1 1/2 c. sliced carrots
- 1 large onion, sliced
- 5 medium potatoes, cubed
- 1 Tbsp. oil
- 2 Tbsp. butter
- 2 Tbsp. flour
- 2 c. water
- salt and pepper to taste
Directions

1Cut beef into small cubes.

2Heat oil on medium heat.

3Brown beef.

4Add water, salt and pepper; cover and simmer over low heat for 1 1/2 hours.

5After meat is tender, add remaining vegetables and continue cooking until vegetables are tender.

6Mix butter and flour; stir into hot liquid.

7Cook until thickened.
