  • 2 lb. beef stew meat, cut into 1-inch cubes
  • 2 Tbsp. cooking oil
  • 3 c. water
  • 1 large chopped onion
  • 1 tsp. pepper
  • 1 tsp. salt
  • 1 1/2 tsp. garlic powder
  • 1 tsp. dried oregano
  • 1 tsp. basil
  • 1 tsp. ground marjoram
  • 3 bay leaves
  • 1 (6 oz.) can tomato paste
  • 3 c. peeled potatoes, cubed
  • 2 c. sliced carrots
  • 1 large green pepper, chopped
  • 1 (10 oz.) frozen green beans
  • 1 pkg. frozen peas
  • 1 (10 oz.) pkg. frozen corn (whole kernel)
  • 3 medium tomatoes, chopped

Directions

    Brown meat in cooking oil in a Dutch oven.

    Add water, onion, seasonings and tomato paste.

    Cover and simmer for 1/2 to 2 hours. Stir in potatoes, carrots and green pepper.

    Simmer 30 minutes. Add more water, if necessary.

    Stir in remaining ingredients, cover and simmer for 20 minutes more.

    Will serve 10 people.
