Beef Stroganoff

  • 3/4 lb. sirloin or flank steak, cut in thin strips
  • 2 c. sliced mushrooms
  • 1 medium onion, sliced
  • 2 Tbsp. oil
  • 1 (13 1/3 oz.) can beef broth
  • 1 Tbsp. Worcestershire sauce
  • 1/2 tsp. paprika
  • 1/3 c. tomato paste or ketchup
  • 1 1/2 c. Minute rice
  • 1/2 c. sour cream

Directions

    Brown the meat quickly in oil, then add mushrooms and onion. Cook, stirring, until the onion is tender, about 3 minutes.

    Add broth, Worcestershire sauce, paprika and tomato paste.

    Bring to a boil.

    Stir in rice.

    Cover and remove from heat.
